A Classic New Jersey Dish: Barbecued Shrimp and Cheese Grits [CharlieBrown'sDildo]

(With a Shrimp Rant™ at no additional charge)

For Ace's Southern readers who may be unfamiliar with grits; they are simply milled corn cooked in some liquid. In this case homemade chicken stock. And adding cheddar cheese, butter and a dash of cream has never hurt any food in the history of cooking, so trust me on this; it's a good thing. Finish it off with some good quality shrimp (American, from the Gulf or off NC or SC is the best around) in a nice barbecue sauce of your choosing, and you will have a quintessential American meal that is fantastic.

Grits are easy to make: four to one boiling liquid to grits (pour them in slowly, stirring constantly), and cook uncovered on low heat until they are tender and creamy, about 20 minutes, stirring the pot frequently. My timing is one sip of a Sazerac to one stir of the pot. I also toss in a bit of garlic, because garlic is always a good thing.

When they are done, stir in some grated sharp cheddar, a fair amount of butter, and some cream. Correct the seasoning -- salt and pepper, and some Cayenne if you are a fan of heat.

The shrimp are even easier. Use good, big shrimp, coat them with your favorite sauce (not too sweet and not too much!), and grill for two minutes/side.

Serve with some more sauce on the side, and Bourbon. Lots of Bourbon.

Crumbled bacon wouldn't hurt this, but some crispy Andouille sausage might be nice too.

This recipe calls for:

4 cups stock
1 cup old fashioned grits
4 ounces grated sharp cheddar
2 ounces butter
1 ounce cream
1 pound large shrimp

Adjust the amount of liquid based on how firm you want your grits. These are fairly firm.

But let's talk about shrimp -- specifically, those great Gulf shrimp whose fishery was destroyed by the evil oil companies. Remember? I made this dish last night, using fantastic Gulf shrimp that I bought at my local market. They weren't particularly expensive, but they were particularly good, and I couldn't even taste the oil.

The reason I try to buy American shrimp, aside from the excellent quality and a desire to support our fisheries, is that the cheap foreign shrimp that has flooded the market for years is cultivated, mostly in India, Indonesia, Thailand and China. The ponds are pumped full of a cocktail of chemicals to promote growth and minimize loss to bacterial disease. And those bacteria can be nasty. The most common is supposedly vibrio, which can be an unpleasant way to spend a few days driving the porcelain bus. Those ponds are also not the cleanest places on earth, and my guess is that there are all sorts of heavy metals and other crap in the silt on the bottom.

But foreign shrimp is cheap, and absent clear evidence that they are bad, it's simply an economic and gastronomic choice. Of course Obama and his minions will soon drive many of our fishermen and packing houses out of business, so we may not have that choice for very much longer.

Anyhoo, grits is one of the best "vehicle" foods around. Plain grits are pretty bland and boring, but they make a great vehicle to mix just about anything in. The list of stuff people put in grits is about as long as an ace movie review.

12 In Charleston we used to get shrimp grits that were very firm, with the bacon/pepper gravy ensauced shrimp baked on top. Was cut and served with a spatula, like lasagna. Don't recall cheese, lots of cream and bacon fat.

This was institutional food, so I doubt we even got that fancy foreign shrimp - I'm sure it was imitation. Still ate it like starving Vikings.

35 This dish has one of my pet peeves with Yankee shrimp dishes, leaving some, or all, of the shell on the shrimp then mixing them with gooey stuff.

I almost got into a fist fight with the cook in a Maine restaurant when I ordered their "Alfredo with Gulf Shrimp", mainly because it was on the menu and I wondered what the hell Mainers would know from shrimp. Not much apparently since it was noodles, cheezy sauce, and unpeeled shrimp stuck right into it. I mean, you have to stick your hands into the sauce to peel the shrimp before you could eat them.

Conversely, after we found it, we ate at the Mainely Delight in Southwest Harbor once or twice a day for nearly a week, and paid $2 a lobster. They also had all you could eat blue crab for $2.50 (IIRC). They considered the crab just to be shit that got into the lobster traps.

69 I too am annoyed when a sauce and pasta dish includes shrimp with the damn shucks still on. This seems to happen more and more in post-trad Italian places. I do not like it.

When the spill first happened, Gulf shrimp got cheap and I stocked up. Then it got real scarce. One hunnerd percent of Kroger seafood is now farm-raised in Thailand, China, Vietnam or Cambodia. I'll take the oil, thank you.

There is also the wild-caught Atlantic whitefish, origin China. WSJ reported last week that the Chinese fleet, driven by Chinese appetite for seafood and accompanied by Chinese intelligence gunboats, are pursing and seining inside South American Law-of-The-Sea limits.

What would be the carbon footprint of a fish, taken off Patagonia, trawled back to China to be gutted and frozen, canalled to the East Coast, trucked to the midwest? Let me point out that the entire fleet of the East and North coasts lie mouldering at the quay, stilled by our own government's overfishing concerns.

The absolute best breakfast on Earth was fixed by one of my high school hunting buddies' Aunt Lilly. We'd wake up around 5 in the morning to the heavenly aroma of bacon, get dressed to go out hunting, and walk into the kitchen and a table full of eggs, bacon, big ol' cathead biscuits, gravy, grits, and, depending on which day it was and whether we'd bagged any, fried wild rabbit.

Yes, she'd been up since about 4:00 am cooking for us. What a fine Southern lady she was. She loved us all like we were her own young'uns.

Damn good times. There was nothing like being raised in the South.

However, my best buddy in the Seabees was a Baltimore guy. He showed me how to steam that stuff with Old Bay and Old Milwaukee. That's the way I cook it now, even crawfish. And as to good cooks? I was raised a Baptist and those church ladies mostly had black mammies when they were little. As far as that goes, I had a black mammie, too. That would be 49-56 timeframe. I loved my mammie. She treated me just like her own younguns. My mama did the same with her younguns.

My beloved Mammie was Mrs Dee. Momma was a welder in the shipyard on Liberty Ships...was during the war. I created a Rosa Parks moment in Jax Fla when I refused that she and I had to go to the back of the bus. The driver wouldn't move until he saw that I wasn't giving up so Mrs Dee and I sat up front. I often wish that I could apologize for putting her through that...but I was only 4.

True. I found a local market that uses meat as a loss leader. I got tbones for $4.99/lb last week and boneless chicken breasts for $2.99/lb.

Walmart wanted damned near $10/lb. of tbone. At the Mexican market I can get chicken leg quarters for $0.69/lb. That is why I never understand the eating cat food thing. Chicken is cheaper than cat food unless you are talking dry food, and while it makes granny's coat smooth and glossy, it is hard on the dentures.

I found some online when I made it recently but they weren't specific on the kind of cheese. Wound up buying some little wedges from the deli section that worked pretty good. The trick is to cook the bacon about half done before wrapping, but not done enough for the bacon to break.
