Biggest batch I had ever done. 10 Gallons in a huge, stainless steel, Navy Surplus Kettle. It didn't turn out. Tasted like shit. I was totally confused, so I took the whole affair out on the back porch and set it out until I could get it to the local dump. It sat for two days, mild weather at 5000 feet when I got curious and sniffed, it didn't smell too sour but had a day to go and figured it needed to come back to a boil so it could survive another day. After it came back to a simmer it smelled amazing and people began to eat it. A case of saltines and a day later there wasn't a drop left. 3 hours?!? Wtf did you do?? I think I'd have just bought a new microwave. It...is...a new microwave. I used a ceramic bowl with a glass pyrex lid. It exploded and blew the lid off...shattering the lid. So there was shattered glass in all the chili that was coating the entire inside of the microwave. My local market uses meat as a loss leader. Last week it was T-bones for $3.99/lb and this week is big fatty pork chops for $1.89/lb. I'm set for the apocalypse.
