NFL Sunday 30-Minute Recipe #1

Chicken Tortilla Casserole
Serves 4

1 T vegetable oil
1 onion, minced
3 garlic cloves, minced
1 cup low-sodium chicken broth
1 (15.5-ounce) can pinto beans, rinsed
1 (14.5-ounce can diced tomatoes, drained
1 T minced chipotle chilies in adobo sauce
2 cups shredded cooked chicken
ľ cup minced fresh cilantro
Salt and ground pepper
5 cups tortilla chips (3 ounces)
2 cups shredded Mexican cheese blend (or mix cheddar/jack, etc)

1. Heat Oven, Saute Aromatics, and Make Sauce: Adjust oven rack to middle position and heat oven to 450 degrees. Heat oil in a 12-inch nonstick skillet over medium heat until shimmering. Add onion and cook until softened, about 3 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Add chicken broth and bring to simmer.
2. Add Vegetables, Chicken, and Herbs: Stir beans, tomatoes, and chipotle into sauce and simmer until heated through, about 2 minutes. Stir in chicken, 3 tablespoons cilantro, ĺ teaspoon salt, and ľ teaspoon pepper.
3. Assemble Casserole: Spread 1 cup tortilla chips over bottom of 8-inch baking dish and top with 1 cup chicken mixture. Spread 2 more cups tortilla chips into dish and sprinkle with 1 cup cheese. Spread remaining chicken mixture into dish and top with remaining tortilla chips. Sprinkle remaining 1 cup cheese over top.
4. Bake until cheese is golden brown and casserole is bubbling, about 10 minutes. Sprinkle with remaining cilantro before serving.

*I have tried the Natural Tostitos, both Blue Corn and Yellow Corn, and the Yellow Corn worked best for me. Donít forget the sour cream (why not!?)

NFL Sunday 30-Minute Recipe #2


Skillet Chili Mac
Serves 4

1 tablespoon vegetable oil
1 pound 90 percent lean ground beef
1 onion, minced
1 tablespoon chili powder
1 tablespoon ground cumin
Salt and ground black pepper
3 garlic cloves, minced
1 tablespoon brown sugar
1 (15-ounce) can tomato sauce
2 cups water
8 ounces elbow macaroni (2 cups)
1 (8-ounce package) shredded Mexican cheese blend (2 cups)

1. Cook Beef: Heat oil in 12-inch nonstick skillet over medium-high heat until shimmering. Add beef, onion, chili powder, cumin, and Ĺ teaspoon salt. Cook, breaking beef into pieces with wooden spoon, until beef is no longer pink, about 3 minutes.
2. Simmer Macaroni: Stir in garlic and brown sugar and cook until fragrant, about 30 seconds. Stir in tomato sauce, water and macaroni. Cover and cook, stirring often and adjusting heat as needed to maintain vigorous simmer, until macaroni is tender, 10-15 minutes.
3. Add cheese: Season with salt and pepper to taste. Stir in 1 cup cheese and sprinkle remaining 1 cup cheese over top. Cover and let sit off heat until cheese melts, about 2 minutes. Serve.

VARIATION:

Skillet Chili Mac with Corn and Green Chiles

Stir in 1 cup frozen corn, 1 (4.5-ounce) can chopped green chiles, drained, and 2 tablespoons minced fresh cilantro with cheese in step 3.

** I always make the variation. Itís really, really good.

It saves an incredible amount of aggravation during the course of a season, not to mention 2.5hrs+/- of precious time per game.

I don't need professional bloviators armed with the message(s) of the day or their ex jock ego maniacal partners to tell me what I'm looking at.

That's how I'm watching the Pats tonight because NBC is the absolute worst.

89 I just tried the idea I used to use to get rid of the "announcers" voice on a football game. Used be you could go to SAP mode on the TV and get rid of the babbling pricks. I would just be the stadium noise and stadium announcer. Does not work that way anymore (at least on my TV). Started doing that when I could just not take Madden anymore.

Oh well, back to muting or recording the games.

They were going to do that this past offseason in free agency, but the NFL hit them with an 18 million dollar salary cap hit this season and next season for going over the salary cap in 2010, the "uncapped" salary year. Right after that was announced, the NFLPA sued the NFL for enforcing a salary cap in that season, and the same people that announced the violations and ruled on them were the ones that said the NFL didn't have a salary cap in that season, which would have constituted collusion.

Shanahan and Bruce Allen have been building up the Redskins' depth over the last 2 years. Instead of allowing Snyder to be like Al Davis and pick up every washed up has been free agent, they have been using free agency on younger players that are solid NFL players, not superstars. Then they use the draft to get some young players that aren't head cases. After this season they can get rid of DeAngelo Hall, and they will have no head cases on the team.
